A super quick mutton curry along with Jeera Rice
Somedays I want to get in and get out of the kitchen as fast as I can, but somedays which also coincide with the somedays of quick cooking, I want hearty full on meals. Not a pasta dish or a wrap…or sandwiches..no….nno..noo.. I need a big bowl of rice and a spicy curry to go with it. If it’s chicken or mutton even better!
This is just a base recipe, it can be modified even further. If you are really pushed for time, just increase the amount of coriander powder in the marinade and finish the cooking process in the pressure cooker itself. Doesn’t need the extra step of frying the onions. Sometimes I also add some coconut milk at the end to change the flavours and make the curry slightly milder..
Quick Mutton Curry
a quick mutton curry in under 30 minutes
Ingredients
Marination
- 1 kg mutton curry pieces (bone on)
- 2 tbsp ginger garlic paste
- 1 onions sliced
- 1.5 tsp chilli powder (adjust as per spice preference)
- 2 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1 tbsp yoghurt
- 1 tbsp crushed black pepper
- 1 sprig curry leaf
- salt to taste
- 1 cup water
for curry
- 1 inch ginger sliced
- 4-5 cloves garlic crushed or sliced
- 3-4 green chilli slit (adjust as per spice preference)
- 1 tsp chilli powder
- 2-3 tbsp oil
- 1 sprig curry leaf
Instructions
- Marinate the washed and drained mutton with all the ingredients listed under the marination section
- Add the marinated mutton to a pressure cooker with a cup of water and cook unitl 4-5 whistles or 15 minutes
- When the mutton is cooked, in a separate pan heat oil and add onions, ginger, garlic, curry leaves. Fry until onions are browned, add chilli powder and fry for couple of minutes. Add the cooked mutton to the pan and let it simmer for 5 minutes
- serve hot or warm with rice or chappati
Jeera Rice
jeera rice – steamed rice flavoured with mild spices and cumin seeds
Ingredients
- 1 cup basmati rice
- 2 cups water
- 1 stick cinnamon
- 3-4 cloves
- 3-4 cardamom
- 2 bay leaves
- salt to taste
- 1-2 tsp lime or lemon juice
- 2 tbsp ghee
Instructions
- Wash and soak rice for 10 minutes
- In a thick bottom, deep pan, add the ghee and the whole spices along with bay leaves
- add the cumin seeds and let it sizzle
- drain the rice and add to the pan. Give it a light mix
- add water, salt and lime juice and let it come to a boil
- Reduce the flame to medium and let the rice cook covered until done, usually around 7-8 minutes
