Thai Basil Chicken

A quick and easy dish packed with flavours for your loved ones to enjoy. Substitute the chicken with mushrooms or tofu & replace fish sauce with some lime juice to make it vegetarian & equally tasty

Ingredients

  • 5-6 shallots sliced
  • 5-6 garlic cloves sliced
  • 4 thai red chillis sliced
  • 3 tbsp oil
  • 1 tsp crushed black pepper
  • 2 tbsp dark soya sauce
  • 1/2 tbsp fish sauce
  • 1 tsp sesame oil optional
  • 1 cup thai sweet basil washed
  • 500 gm chicken mince
  • 1 cube chicken or vegetable stock

Instructions

  • In a wok, on high flame, heat the oil
  • when the oil is hot, add the sliced shallots, garlic and chillis. Stir to cook
  • As the shallots soften, add the mince chicken. Break down the mince pieces with the spatula and cook until brown. around 2-3 minutes
  • add the soya and fish sauce. Also pour in the stock at this point and let it simmer
  • after a couple minutes, add the basil and mix along with the chicken. The basil leaves will wilt in sometime
  • Switch off the flame and drizzle with sesame oil (optional). That's it we're done.
  • Enjoy with hot steamed rice.

Notes

  • Since the sauces and stock both have high sodium levels, i did not need to add any more salt
  • Make sure you cook the rice before you start with this dish, because it is sheer torture to wait for the rice to cook after this dish is made - It is soooo yummy :)
